caramelizing onion can be a chore, not only do you have to continually stir and keep you eye on them, but you have to watch the heat to make sure they don't burn. there's nothing worse than spending an hour watching and stirring just to have the burn in the end because your heat was to high.
solution: slow caramelizing in the crockpot = game changer

recipe:
ingredients:
2 medium onions (red or white)
2 tablespoons butter
1 tablespoon olive oil
fresh herbs (whatever you have on hand)
kosher salt + ground black pepper
to make:
first step is to slice the onions, cut the onion in half and then slice downwards top to bottom (into half moons). add to crockpot along with herbs, butter, olive oil, s+p, stir.
set your crockpot to low and let simmer for hours
